Picked up three Baker River Salmon
Smoked a Baker River salmon yesterday. 4 hours in 2 cups sugar and 1/2 cup salt. Rinsed and let dry for 1.5 hours and then smoked at 150 degrees for two hours. Good, moist, but next time let it go for 3 hours.
